I received an instant pot for Christmas; now I’ve been very skeptical as I like to be in control of what I am cooking. I’ve never used a pressure cooker, despite my dads’ constant instance that I need to use one. I’m old school lol I like to stir and taste and watch the love that is happening in the pot. Well, I have a confession, ...I LOVE my Instant Pot. I used it to make Turkey stock, turkey soup, honey sesame chicken and chilli. Today I am going to try a ham bone and bean soup, yum.
I was really impressed with how my stock came out and so quickly usually it boils on the stove all day, but this was done in about an hour! The turkey soup was so good as well, I was delightfully surprised. My chilli I kept getting a burning message, but I would just stir and continue, and it was fabulous. I like a really thick hearty chilli, and this did not disappoint.
I will include the honey sesame chicken recipe, I really enjoyed it. I wasn’t too sure how I was going to like it as some things that call for soy sauce can be bitter or salty, this was perfectly balanced. I did add more chilli flakes as my family likes a little heat, and my sauce reduced enough that I didn’t need to add the cornstarch slurry. My family loved the honey sesame chicken, I’m sure I will be making this regularly.

Honey Sesame Chicken
Serves 4-6
½ cup diced onion
2 garlic cloves minced
1 tbsp olive oil
4-6 chicken thighs
½ cup low sodium soy sauce
¼ cup ketchup
¼ tsp red pepper flakes
¼ cup honey
2 tsp toasted sesame oil
2 tbsp cornstarch
Sesame seeds as needed
2 tbsp finely sliced scallions
Heat instant pot on saute normal until hot.
Add the chicken and cook until lightly browned approx. 8 minutes.
Transfer chicken to a plate, cover with foil loosely.
Add onion to the pot, cook until soft, approx. 4 minutes.
Add garlic to the pot, cook approx. 2 minutes.
Add soy sauce, ketchup and red pepper flakes to the inner pot.
Mix until deglazed. Return chicken to the inner pot.
Cancel saute.
Close and lock lid, turn the steam release handle to sealing.
Pressure cook manual, high for 5 minutes. Quick-release.
Transfer chicken to a cutting board, chop into pieces.
Add honey and toasted sesame oil to the inner pot.
Add cornstarch to a small bowl, add ¼ cup of the pot liquid to the small bowl. Mix with a tablespoon, transfer slurry to the inner pot. Stir until thickened.
Return chicken to the inner pot. Mix until coated. Season to taste. Garnish with sesame seeds and scallion. Serve.
